A former military fortress, cliff-top Cap Rocat’s defence days are over – now the bunkers, drawbridge and trenches form the peaceful backdrop to this Bay of Palma bolthole. The heritage-site hotel is set on its own peninsula, with quiet courtyards, sandstone walls, suites carved from the rocks and an infinity pool built into the ramparts. The sheltered, stone spa may be 12 metres below ground but the light still reaches it – in more ways than one.
